Crafting has been a large component of Larian's titles so far but this is not necessarily the case in Baldur's Gate 3.
There are a few quests to craft an item one way or another but the classic way of crafting items at every forge with hammer and anvil is not present here.
This begs the question of whether the players are supposed to keep the crafting materials they come across.
In short, no, you don't need to keep bronze, silver or gold ingots at all. Sell them all as you collect them along with any gems, including garnet, diamonds and so on.
The long answer is that in the base Baldur's Gate 3 you do not need these but there may be a role for them in the future. There is a long list of cut content from the game, including the crafting system and it is currently unknown whether it will be added at some point in the future.
Larian Studios did add cut content into their previous titles with their Definitive Editions or equivalents but there is just no official source that would note what we can expect from such an upgrade for Baldur's Gate 3 yet.
In any case, if you are reading this while playing a potential Definitive Edition of Baldur's Gate 3, it's not excluded that such a system was added in the meantime.
