To make potions, you'll have to fing all sorts of herbs. The answer to this question is quite straightforward, provided you know a thing or two about how life functioned back in mediaeval times. If you want your fruits and herbs to last longer, you simply must dry them, and to do that, you'll have to find special places called drying racks.

Once you stumble across such a place (there is one very early in the game inside Tachov), you can simply put all your fruits and herbs on the racks, and luckily, you won't have to do anything else—instead of fresh food and herbs, you'll get a dried one with even better stats than the fresh one and with significantly higher lifespam.

When it comes to meat you gather from animals you kill, it can spoil even faster than fruits and herbs, and to prevent that, you should find a smokehouse. Similar to the drying racks, a smokehouse will let you preserve your meat longer. Simply put all the meat you have inside the smokehouse, and you'll get smoked meat, ready to sit in your inventory for as long as you like.
