Genshin Impact is producing them a lot of money, and with almost 100M Switch consoles sold worldwide, it would be crazy not to release it on the Nintendo's money-making console too.
But, we're all still waiting, even though Genshin Impact has been announced for Switch. The latest news (or rumours, if you will) are telling us that the reason behind this delay is the weaker hardware of the Switch console.
